The Café offers alternatives for students with allergies

Wheat, peanuts, tree nuts, dairy, casein, soy, egg, sesame, sulfites, lupin, mustard, fish, shellfish and crustaceans are the 14 most common food allergies.

These allergies affect 12 million Americans of all ages. Living with such allergies can be limiting and some even risk anaphylaxis, a life-threatening allergic reaction that can occur within 15 seconds of exposure.

In addition to the health risks, living with allergies can also present challenges when eating away from home.

Justin Clark, general manager of The Café at Kirkwood Community College, said there are several stations around The Café offering different kinds of food like the salad bar, burrito, and grille where there are gluten free buns and other foods for those with allergy concerns.

Clark mentioned that if students have concerns they can ask about ingredients and employees will help.

Clark assured that almost all the food in The Café is made in-house so they can give students the ingredient list with confidence.

With food allergies many individuals just need the smallest amount of an allergen and they will have a reaction so cross-contamination is an issue.

Clark mentioned that they have strict state and federal sanitation and hand washing laws they must follow.
